I'm not quite sure where I got this recipe from. I think it was inspired by Chinese tomato egg stir fry, and Uyen's cooking in general. I've been making it for a while now, for breakfast, and only just now thought to post it.
Although I listed celery and cabbage in the ingredients, this recipe works with just about any veg. I use it to use up whatever's left in the fridge, but so far, I think celery is my favourite. Cabbages are also just unnecessarily dense, and I find I always have cabbage to use up, so that's why it ended up in the ingredients.
The seasonings I listed are my favourite for this dish, but of course, they're entirely customizable. Sometimes I use soy sauce, mirin, and sake instead. I don't generally measure my seasonings, instead going by taste, but when testing this recipe with actual measurements, these are what I found were the tastiest, though they might be a bit strong for some people.
If you noticed the chia seeds and thought that was a strange edition, believe me, I agree. I struggle to get enough fibre because I dislike things like oatmeal (ie. goatfood) and most fruit, so I hide chia seeds in anything I can to make sure I get my daily dose.
Actually, I still have bloody cabbage in the fridge, and I haven't had any veg today, so I may as well make this for dinner. Whether you end up trying this lazy recipe or make something else, I hope you have an enjoyable dinner too.
